Prior to the Spanish invasion of their country in the 16th century, when they forbade its culture, the Incas relied heavily on quinoa, a grain that is particularly high in proteins. Quinoa almost completely vanished as a result of this restriction, but thankfully certain families who were devoted to the traditions managed to retain planted plots throughout all of these decades of prohibition.
