The kombu kelp (laminaria ochroleuca) has a brown shade, it's far hand-picked and dehydrated at low temperatures (inside 38°c). Its consistency is fleshy and crunchy, its flavor is sharp. You need to rehydrate and prepare dinner it for two minutes to use as a side dish or as an ingredient for: soups, stews, croquettes, omelets, pasta, rice, couscous. Best to apply at the same time as cooking legumes.
